Lists are one of my favorite features within SharePoint since their uses are nearly endless. Since using SharePoint online I've learned some tricks to format the list options in ways which improve the user-views and sorting information options. Some features can be applied quickly if created using the right editing tools, or if done in a certain order, like the choice selection formatting.
A choice selection is often a controlled list column like Approved; Disapproved, Yes; No, or even something more complex like a list of options for say.... animal species of a more complex variety.
Having these options formatted differently makes identifying information in the list easier, and is certainly easier on the eyes!
Typically, list columns are added through the list settings options. This provides options for the column type, which set to Choice will update options to allow for the choices to be added on separate lines.
This set-up technique is ideal for pasting choices from pre-defined text. Choices can be typed or pasted into the text box and saved.
Now if you're familiar with these list tools, you know you can scroll down and add formatting options if you know the JSON. But there's a better way to do it...
From the list view, hovering over the column titles you should see an "add" button. Add a column using these front-end tools:
By creating the column using the list options a user benefits three ways:
Simple to change choice colors as you go! Click the art palette next to the choice to change the background color associated with the option.
Newly added values automatically format to new color when added. By updating the theme of the site, the applicable color palette will be reflected.
If user added values are allowed, they will also automatically be formatted and colored based on this palette.

SharePoint lists are so dynamic now, but it takes time to learn the unique capabilities of the online tools. Coloring the choices is only the start of the formatting options which are now available with minimal effort and time.
